This Festive Cocktail – How to Make It

WHere is an easy interpretation of a cocktail from our latest menu. This is a batch pre-mixed which is packed full of essence of the festive period, making it ideal for your festive gathering. Save the extra citrus syrup for morning drinks, desserts, or to make another batch of bikinis.

The Bikini Cocktail

Serves 10 servings

Ingredients for the Clementine Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Premix (produces 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Citrus Syrup: Put the listed components into a pan, heat until it reaches a light boil, mixing to dissolve. Next, turn off the stove and leave to cool down entirely. Decant into a sealable bottle, seal and store in the refrigerator, where it will keep for around one month.

Preparing the Cocktail Base: Pour all the spirits and syrup in a large bottle, let it rest for an hour, then pass it through preferably using muslin, making it fully clarified.

To serve: Pour 85ml of the premix to a cocktail shaker packed with ice, and agitate lightly for a minute to cool it down. Strain to a frosted cocktail glass or similar, top with a few cranberries and finish with a light spray with the mandarin essence over the top.
